Well i too have suffered with changing cables regulary especially over hte wet winter months, it usually costs bot £10 for a fres set of inners & outers from your local bike shop but i have invested in some GORE ride on cables, (£35) they are a sealed cable so they shouldnt seize up and hopefully pay for them selves in under 12 months and give reliable performance too. let me know if you need any help fitting cables, cheers

Cables do stretch a bit over time. This should be easy to adjust though - just turn the adjuster barrel. If you have one on the gear shifter, do it as you're riding until the problem is solved.
However, when you say you have to double click each time that suggests to me that it's not just cable stretch (one click with a stretched cable should pull the derailleur the same distance as a new cable). Either you cables have gone stretchy (unlikely) or there's something wrong with your derailleur.
Have you tried watching the derailleur move as you shift gears e.g. with your bike in a stand or upside down to see if it looks wrong? If you rock the derailleur it should feel pretty solid if it's not worn out and I think the bottom bit should be vertical, not raking. If it feels wobbly it's either not tight or it's just worn out. If it's at an angle you've probably bent your hanger.
